Health benefits: Apricots are a good source of the antioxidant lycopene, which is also found in tomatoes and watermelon. This substance may reduce the risk of heart disease and prostate cancer. The soluble fiber in apricots may offer protection from digestive diseases and will help keep you regular.

Quick-prep ideas: Add apricot slices to a green salad, dice them and add them to hot cereal, or chop them and add to a whole-grain pancake batter.

What to look for: rich orange color, slightly soft. If it’s pale yellow or hard, the apricot isn’t ripe.
